On Monday night we were pleased to welcome a group of Parisian hospitality professionals to a dinner inspired by the Bonemasters Europe product range. This event was hosted in conjunction with our distributor in Paris, Le Delas. Le Delas are located in the Rungis Paris and provide top quality ingredients and products all over France. A big thank you to Rousseaulesellier for cooking and creating the menu as well as hosting the event.

The Menu

First Course: L’oeuf Parfait

We started off the night with an unexpected bang! At Bonemasters Europe we love trying and sharing out of the box combinations and this one was a real surprise.

This L’oeuf Parfait (The Perfect Egg), was cooked at 63 degrees for 45 minutes. This dish was topped off with Red Wine Jus and crispy chips of spelt.

Second Course: Black Cod and Veal Glace

The second course was comprised of a Black Cod topped off with Wakame, Lemon Cress and Veal Glace. We love using Veal Glace on fish dishes as it creates a rich and more rounded flavor.

Third Course: Canard with Duck Jus

For the final dish we enjoyed at roasted fillet of DuckĀ  with parsnip mash and Duck Jus. Our Duck Jus is one of our favorites as it is so unique in its flavor profile.
